Net carbs is total carbs minus fiber - the carbs your body actually digests and converts to glucose. Fiber passes through, so subtracting it gives the number that drives blood sugar. Most keto / low-carb plans target net carbs (often 20-50 g/day) rather than total carbs, since 30 g of carbs with 25 g of fiber affects you very differently than 30 g of carbs with 0 g of fiber.
